  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch (for coating the tofu)
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking

Instructions

  1. Press the tofu between clean kitchen towels for about 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into 1-inch cubes and coat evenly with cornstarch.
  3. In a large skillet over medium-high heat, add neutral oil and cook the tofu until golden brown on all sides.
  4. Remove the tofu and sauté sliced bell peppers and onions in the same pan until caramelized.
  5. Add minced garlic and ginger; cook for another minute until fragrant.
  6. Stir in pineapple chunks and cook until lightly caramelized.
  7. Combine soy sauce, rice vinegar, and maple syrup; pour mixture over veggies and add crispy tofu back to the pan. Stir gently for two minutes.
