  • 12 oz penne pasta
  • 1 lb chicken breast (sliced) or shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper (thinly sliced)
  • 1 green bell pepper (thinly sliced)
  • 3 cloves garlic (minced)
  • 2 teaspoons Cajun seasoning
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley or cilantro (for garnish)
  • Juice of ½ lime

Instructions

  1. Cook the penne pasta in salted water until al dente; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken or shrimp with salt, pepper, and Cajun seasoning, then cook until done. Remove from skillet.
  3. Add butter to the same skillet and sauté bell peppers and garlic for about 3 minutes.
  4. Stir in remaining Cajun seasoning, then add heavy cream and Parmesan cheese. Let simmer for a few minutes until creamy.
  5. Mix cooked pasta and protein into the sauce, adding reserved pasta water as needed for consistency.
