  • 20 oz refrigerated three cheese tortellini
  • 1 tbsp olive or grapeseed oil
  • 1/3 cup dry apple vinegar
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 6 oz seafood or chicken stock
  • 4 oz cream cheese (softened)
  • 2 cups heavy cream
  • 5 oz fresh baby spinach
  • Freshly grated Parmesan cheese

Instructions

  1. Season shrimp with all-purpose seasoning.
  2. Sear shrimp in oil over medium-high heat until pink and golden (1-2 minutes per side). Remove and set aside.
  3. In the same skillet, reduce heat to medium-low and deglaze with apple vinegar. Add butter and garlic; sauté until fragrant.
  4. Whisk in stock and cream cheese until smooth. Stir in heavy cream and let simmer for 5-7 minutes.
  5. Cook tortellini according to package instructions; drain.
  6. Add spinach to the sauce until wilted, then mix in red pepper flakes and Parmesan.
  7. Combine cooked tortellini and shrimp with the sauce; toss gently to coat.
