1 pound large shrimp, peeled and deveined
2 ripe avocados, diced
2 ripe mangoes, diced
¼ red onion, finely diced
¼ cup chopped fresh cilantro
Juice of 2–3 limes
Cooked rice or quinoa
2 tablespoons olive oil
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon garlic powder
Salt and black pepper to taste
Optional: ½ to 1 jalapeño, seeded and minced
Optional dressing: 2 tablespoons olive oil, 1 tablespoon lime juice, ½ teaspoon honey or maple syrup, salt and pepper to taste
Optional toppings: sesame seeds, red pepper flakes, chopped green onions, tortilla strips or crispy wonton strips
Instructions
Season shrimp with chili powder, cumin, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat. Sauté shrimp for about 3-4 minutes per side until pink and opaque.
In a bowl, combine diced mangoes, red onion, cilantro, lime juice, and jalapeño (if using) to make the mango salsa.
Assemble bowls starting with a base of cooked rice or quinoa. Top with sautéed shrimp, mango salsa, and diced avocado.
Drizzle with optional dressing if desired and garnish with toppings like sesame seeds or tortilla strips.
