  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. Prep vegetables: wash asparagus, slice bell pepper, rinse snap peas; mince garlic and ginger.
  3. Mix sauce: combine soy sauce, cornstarch, and a tablespoon of water until smooth.
  4. Heat oil in a skillet over medium-high heat; sauté garlic and ginger for 30 seconds.
  5. Add shrimp in a single layer; cook until pink (about 3–4 minutes total), then remove from pan.
  6. Stir-fry asparagus and bell pepper for 2–3 minutes; add snap peas and cook until bright green.
  7. Return shrimp to the pan; pour sauce over everything and stir until thickened (about 2 minutes).
  8. Serve hot over cooked rice or noodles.
