  • 3 1/2 cups grated zucchini (well-drained)
  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 box of corn muffin mix (8.5 ounces)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grate zucchini and drain well.
  3. In a large bowl, combine grated zucchini, onion, half the cheddar cheese, corn kernels, jalapeño, eggs, garlic powder, cumin, salt, and black pepper. Mix well.
  4. Fold in the corn muffin mix until combined.
  5. Pour mixture into a greased baking dish and top with remaining cheddar cheese.
  6. Bake for approximately 50 minutes until golden brown and set in the center.
  7. Allow to cool slightly before serving.
