  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon lemon juice (optional)
  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into cubes
  • Wooden or metal skewers

Instructions

  2. Place cubed chicken in a resealable bag or shallow dish and pour marinade over it. Seal and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for about 15 minutes. Thread marinated chicken onto skewers.
  4. Preheat grill to medium-high heat and grill skewers for about 10-15 minutes until chicken is cooked through (internal temperature of 165°F).
