  • ½ Cup pumpkin puree
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • Graham crackers (broken into small pieces)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the pumpkin puree, egg, vanilla extract, and optional food coloring.
  4. In another bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet.
  8. Press extra marshmallows, chocolate chips, and crushed graham crackers on top before baking.
  9. Bake for about 12-14 minutes or until edges are golden but centers remain soft.
  10. Allow to cool briefly on the baking sheet before transferring to a wire rack.
