  • 6 (8-inch) tortillas
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup melted butter
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup heavy whipping cream
  • 2 tbsp powdered sugar (for whipped cream)
  • Pecans (chopped, for garnish)

Instructions

  1. Preheat oven to 400°F. Cut rounds from tortillas and poke holes in each.
  2. Mix granulated sugar and cinnamon on a plate. Brush tortillas with melted butter and coat in cinnamon-sugar.
  3. Place tortillas between muffin cups upside down and bake for about 10 minutes until golden brown.
  4. Whip together heavy cream, powdered sugar, and vanilla until stiff peaks form.
  5. In another bowl, beat cream cheese and powdered sugar until smooth. Add pumpkin puree, vanilla extract, and pumpkin pie spice; mix well.
  6. Fill cooled taco shells with pumpkin filling, top with whipped cream, and garnish with pecans.
