  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, combine melted butter and brown sugar; spoon into muffin cups.
  3. Top with pineapple pieces and maraschino cherry halves.
  4. In another bowl, cream together softened butter and granulated sugar; beat in egg and vanilla.
  5. Mix dry ingredients separately, then combine with wet until a soft dough forms.
  6. Press dough over the topping in each muffin cup.
