  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/4 cup coconut cream
  • 1/2 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup almond milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt unsalted butter over medium heat. Stir in brown sugar, coconut cream, vanilla extract, and salt until smooth. Allow to cool slightly.
  3. Arrange pecans in a circular pattern at the bottom of a greased cake pan and pour the caramel mixture over them.
  4. In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream softened butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time to the creamed mixture followed by vanilla extract. Gradually mix in dry ingredients alternately with almond milk until just combined.
  6. Pour batter over the pecan topping and smooth the surface.
  7. Bake for about 35–40 minutes or until a toothpick comes out clean.
  8. Let cool for five minutes before flipping onto a serving plate.
