  • 1/2 pound medium shrimp, peeled and deveined
  • 1/2 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1/2 pound turkey sausage or beef sausage, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Cajun seasoning, divided
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Chopped fresh parsley
  • Grated Parmesan cheese
  • Sliced green onions

Instructions

  1. Cook the pasta according to package instructions; reserve some pasta water.
  2. Season shrimp and chicken with half the Cajun seasoning. Sear chicken in a skillet until golden brown; set aside.
  3. Cook shrimp until pink; remove from skillet.
  4. Brown sliced sausage in the same skillet.
  5. Sauté bell peppers and onion until softened; add garlic.
  6. Make a roux with butter and flour; gradually whisk in chicken broth and heavy cream.
  7. Stir in Parmesan cheese and remaining seasonings; simmer until thickened.
  8. Combine proteins and vegetables into the sauce, then toss with cooked pasta.
