  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley
  • 1 tbsp butter
  • 1/2 cup chicken broth
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. In a skillet over medium heat, heat olive oil. Season chicken with salt, pepper, and smoked paprika; cook until golden brown (6-7 minutes per side). Remove and slice into strips.
  3. In the same skillet, melt butter; sauté onions and garlic for 2-3 minutes until softened.
  4. Add chicken broth; let simmer before stirring in heavy cream. Cook until slightly thickened.
  5. Lower the heat and mix in Monterey Jack cheese and Parmesan until melted.
  6. Toss cooked spaghetti into the sauce to coat thoroughly.
