  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 cup vegan butter (or coconut oil), melted
  • 1 cup fresh lemon juice (about 45 lemons)
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon turmeric powder (for color)
  • 3/4 cup water

Instructions

  1. Preheat oven to 350°F (175°C). Combine rolled oats, flour, brown sugar, baking soda, and melted butter in a bowl. Press into the bottom of a greased 9×9 inch baking dish.
  2. Bake the crust for about 10 minutes until lightly golden.
  3. In a saucepan over medium heat, whisk together lemon juice, granulated sugar, cornstarch, turmeric powder, and water until thickened (about 5-7 minutes). Pour over the pre-baked crust.
  4. Sprinkle remaining oat mixture on top and bake again for another 28-30 minutes until golden brown. Allow to cool completely before slicing.
