  • 200 grams ground beef
  • 400 grams lean ground beef
  • 1 large egg
  • 100 grams crustless bread
  • 125 ml white grape juice
  • 100 grams onion (minced)
  • 4 garlic cloves (minced)
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 teaspoons dried parsley
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups hot water or stock (vegetable, beef, or chicken stock)
  • 810 tablespoons lemon juice

Instructions

  1. In a large bowl, combine ground beef, minced onion, garlic, egg, crustless bread, white grape juice, cumin, oregano, parsley, salt, and pepper. Mix well using your hands.
  2. Shape the mixture into small balls (about one inch in diameter) and set aside.
  3. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides.
  4. In another pan, melt butter and whisk in flour to create a roux. Gradually add hot water or stock and lemon juice; stir until thickened.
