  • 8 chicken thighs
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper for the dry rub.
  3. Coat the chicken thighs evenly with the dry rub.
  4. In a large oven-safe pan, sear the chicken in reserved bacon fat until browned on both sides.
  5. Sauté chopped cabbage in the same pan until wilted.
  6. Add sliced potatoes and onions along with chicken stock; mix well.
  7. Arrange the seasoned chicken on top, then bake for 45–50 minutes or until chicken reaches an internal temperature of 165°F (75°C).
