  • 1 tablespoon olive oil
  • 4 ounces brie cheese, rind removed
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan over medium heat, add olive oil and fresh cranberries. Cook until they burst, then stir in honey, orange juice, cinnamon, salt, ginger, and black pepper.
  3. Cut pockets into each chicken breast, fill with brie cheese followed by the cranberry mixture, and secure with toothpicks.
  4. Sear in an oven-safe skillet for 2-3 minutes on each side until golden brown.
  5. Top with panko breadcrumbs mixed with melted butter and bake for 20-25 minutes until reaching an internal temperature of 165°F (74°C).
  6. Let rest for 5 minutes before serving. Garnish with parsley.
