  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (as needed for texture)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, peanut butter, granulated sugar, and brown sugar until fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk flour, baking soda, and salt; gradually add to the wet mixture until a dough forms.
  5. Shape the dough into small ovals and press with a fork for the classic crosshatch design. Sprinkle tops lightly with sugar.
  6. Bake for 8–10 minutes until golden and allow cookies to cool on a wire rack.
  7. For the filling, beat together peanut butter and butter; add powdered sugar and vanilla until creamy. Adjust texture with milk as needed.
