Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (as needed for texture)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until a dough forms.
  5. Shape the dough into small ovals on the prepared baking sheet and create a crosshatch pattern with a fork.
  6. Bake for 8–10 minutes until lightly golden around the edges.
  7. Meanwhile, prepare the filling by beating together peanut butter and softened butter; gradually mix in powdered sugar and vanilla until creamy. Adjust texture with milk if needed.
  8. Once cookies are cool, spread filling onto one cookie half and top with another cookie to form sandwiches.
