Ingredients

  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for topping)
  • Flaky sea salt, optional

Instructions

  1. In a bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well combined.
  2. Line a cutting board with parchment paper and press the mixture into an even layer about 1/2 inch thick.
  3. In a separate bowl, melt chocolate chips with coconut oil in the microwave in 30-second intervals until smooth.
  4. Pour the melted chocolate over the cookie dough base and spread evenly. Optionally sprinkle flaky sea salt on top.
  5. Freeze for about 10 minutes until set, then cut into pieces.
