  • 1 cup milk (any type)
  • 1 tbsp white or apple cider vinegar
  • 1 large egg
  • 3 tbsp melted unsalted butter
  • 1 1/2 cups grated sharp cheddar cheese
  • 2 chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, baking powder, baking soda, and salt. Whisk until well mixed.
  3. In another bowl, whisk together milk, vinegar, egg, and melted butter.
  4. Pour wet ingredients into dry ingredients; stir gently until just combined.
  5. Fold in shredded zucchini, grated cheddar cheese, and chopped green onions.
  6. Pour the batter into a greased loaf pan and smooth out the top.
  7. Bake for about 60 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool for 10 minutes before transferring to a wire rack.
