Ingredients

  • Ground chicken breast
  • Bell peppers
  • Uncooked white rice
  • Cherry tomatoes
  • Kalamata olives
  • Feta cheese (or alternative)
  • Fresh dill

Instructions

  1. Preheat your oven to 350°F (175°C). Cook the white rice according to package instructions.
  2. Slice each bell pepper in half lengthwise and remove seeds. Arrange them cut-side up in a baking dish.
  3. In a skillet over medium heat, heat olive oil and add ground chicken, seasoning with salt and pepper. Cook until no longer pink.
  4. Stir in diced onion, minced garlic, diced zucchini, and Italian seasoning; cook for two minutes.
  5. In a large bowl, combine cooked rice, chicken mixture, cherry tomatoes, chopped olives, crumbled feta (reserve some for topping), and fresh dill.
  6. Stuff each bell pepper with the filling mixture and sprinkle additional feta on top. Pour water into the baking dish and cover with foil.
  7. Bake for 40–45 minutes until peppers are tender.
