  2. Knead on a floured surface for about 6-8 minutes until smooth and elastic. Place in an oiled bowl, cover with a towel, and let rise for about an hour.

  4. Punch down the risen dough, divide into 12 portions, and shape into balls. Place in the muffin tin and let rest for another 20 minutes.
