  • 1 lb ground beef (or ½ beef + ½ turkey)
  • 1 large egg
  • ½ cup breadcrumbs
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 12 oz linguine
  • ¾ cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, egg, breadcrumbs, Parmesan cheese, parsley, garlic, salt, and pepper. Mix gently and form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown on all sides (about 6-8 minutes). Remove from skillet and set aside.
  3. In the same skillet, add butter and minced garlic; cook until fragrant. Stir in lemon juice and parsley before returning meatballs to the pan to simmer for about 5-7 minutes.
  4. Cook linguine according to package instructions; reserve pasta water. In a separate saucepan, melt butter and stir in heavy cream until simmering. Add Parmesan cheese and season with salt and pepper.
  5. Toss cooked linguine in the cream sauce before serving topped with meatballs and remaining garlic butter.
