  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups chopped pecans, toasted
  • 1/4 cup unsalted butter for the glaze
  • 1/3 cup brown sugar for the glaze
  • 2 tbsp milk for the glaze
  • 3/4 cup powdered sugar for the glaze

Instructions

  1. Preheat your oven to 350°F (175°C). Toast chopped pecans on a baking sheet for 5–7 minutes until golden and fragrant. Allow to cool.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy (about 3–5 minutes).
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture until just combined. Fold in cooled toasted pecans.
  5. Drop rounded balls of dough onto a parchment-lined baking sheet and bake for 10–12 minutes or until edges are golden.
  6. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  7. For the glaze, melt together unsalted butter and brown sugar over low heat; stir in milk then whisk in powdered sugar until smooth. Drizzle over cooled cookies.
