  • 2 cups sharp cheddar cheese, shredded
  • 1 ½ cups sour cream
  • ¼ cup unsalted butter
  • 1 small yellow onion, diced
  • 2 teaspoons garlic, minced
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup chicken broth, room temperature
  • ½ cup whole milk, room temperature
  • 2 large yellow onions, thinly sliced for topping
  • 4 cups vegetable oil

Instructions

  1. Preheat your oven to 350°F and prepare a 9×13-inch baking dish with nonstick spray.
  2. In a skillet over medium heat, melt ¼ cup of unsalted butter; sauté the diced onion and garlic until soft.
  3. In a large bowl, combine thawed hash browns, sautéed onions, melted butter, sour cream, shredded cheese, flour, salt, black pepper, cayenne pepper, chicken broth, and milk. Mix well.
  4. Transfer the potato mixture into the prepared baking dish and spread evenly.
  5. In another skillet, heat vegetable oil and fry the thinly sliced onions until golden brown.
  6. Layer the crispy onions on top of the potato mixture and bake for about 50 minutes until bubbly and golden brown.
