  • 1 cup hot coffee
  • 8 oz semisweet chocolate
  • 2 cups heavy whipping cream
  • 6 oz bittersweet chocolate
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp light corn syrup
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, oil, buttermilk, and hot coffee until smooth.
  4. Combine wet and dry ingredients gently until just mixed; do not overmix.
  5. Pour batter into prepared pans and bake for 25–30 minutes until a toothpick comes out clean. Cool completely.
  6. For the mousse, melt semisweet chocolate and let cool slightly. Whip cold cream with powdered sugar until stiff peaks form; fold in chocolate.
  7. Assemble by layering cake with mousse; refrigerate for at least three hours.
  8. For ganache, heat cream then pour over chopped bittersweet chocolate and stir until smooth; cool slightly before pouring over the cake.
