  • 5 ½ oz white chocolate (finely chopped)
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • 3 ½ oz kataifi pastry (chopped and separated)
  • 1 tbsp butter
  • 9 oz milk chocolate (finely chopped)
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. In a bowl, whisk together flour, cornstarch, sugar, and salt. Add vegetable oil and water; mix until smooth.
  2. Let the batter rest for about 30 minutes.
  3. Cook kataifi strands on a nonstick pan over low heat for about 30–45 seconds until set. Cool on a towel.
  4. Melt white chocolate and double cream in short intervals until smooth.
  5. Blend ground pistachios with salt into a paste and mix into the white chocolate.
  6. Toast kataifi in melted butter until golden.
  7. Combine toasted kataifi with the pistachio mixture and chill for an hour.
  8. Roll chilled filling into balls and dip in melted milk chocolate.
  9. Chill again until set before serving.
