Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Season chicken with salt, pepper, garlic powder, and Italian seasoning. Heat olive oil in a skillet over medium-high heat and cook chicken until browned (5–6 minutes per side). Remove from skillet.
  2. Lower heat and add butter; sauté minced garlic for 30 seconds. Stir in orzo and cook until lightly golden (1–2 minutes).
  3. Add sun-dried tomatoes and chicken broth; bring to a simmer and cover for about 10 minutes until orzo absorbs most liquid.
  4. Stir in heavy cream and Parmesan cheese; then add chopped spinach until wilted.
  5. Return chicken to the skillet to heat through for another 2 minutes before serving.
