  • 1 lb beef sirloin, thinly sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ½ cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil and cook the beef sirloin until browned (about 5 minutes). Remove from skillet.
  3. In the same skillet, sauté green bell pepper, onion, and garlic until softened (5-7 minutes).
  4. In a separate saucepan, melt butter over medium heat. Whisk in flour for about a minute. Gradually add milk while whisking until thickened.
  5. Stir in provolone and Parmesan cheeses until melted. Season with salt and pepper.
