  • 1 tablespoon fresh ginger, minced
  • 4 garlic cloves, minced
  • 1 red chili, minced
  • 2 (14-ounce) cans coconut milk
  • 2 to 3 tablespoons soy sauce
  • 3 tablespoons red curry paste
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 lbs chicken breast, sliced
  • Cilantro, chili oil or chili crunch, scallions, fresh lime
  • Steamed rice

Instructions

  1. Heat coconut oil in a large skillet over medium heat. Add diced onion and sauté for 4-5 minutes until softened.
  2. Stir in minced ginger, garlic, and red chili; cook for an additional 2 minutes until fragrant.
  3. Pour in coconut milk along with brown sugar, soy sauce, salt, pepper, and red curry paste. Mix well.
  4. Add sliced chicken breast to the simmering sauce and reduce heat to medium-low. Let it simmer gently for 15-20 minutes until the chicken is cooked through.
  5. Adjust seasoning to taste and serve over steamed rice, garnished with cilantro and a squeeze of lime.
