  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. For the crust, combine graham cracker crumbs and sugar in a bowl. Stir in melted butter until blended. Press mixture into the bottom of a 9×13 inch dish and refrigerate.
  2. In another bowl, beat cream cheese and powdered sugar until smooth. Mix in coconut extract and fold in half of the Cool Whip. Spread this mixture over the chilled crust.
  3. Whisk together pudding mix and half-and-half until thickened; pour over the cream cheese layer.
  4. Spread remaining Cool Whip on top and sprinkle with toasted coconut.
  5. Chill for at least six hours or overnight before serving.
