  • 1 and 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 and 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini, squeezed dry
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup all-purpose flour (for streusel)
  • 1/4 cup packed light brown sugar (for streusel)
  • 1/4 cup granulated sugar (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 1/4 cup cold unsalted butter, cut into small pieces (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, ground cinnamon, baking soda, salt, and nutmeg.
  3. In a separate medium bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry mixture. Stir gently until just combined. Avoid overmixing.
  5. Gently fold in the grated zucchini along with any optional nuts if using.
  6. Transfer your batter into the prepared loaf pan and spread it evenly.
  7. In a small bowl, mix the flour, brown sugar, granulated sugar, and ground cinnamon for the streusel topping. Cut in the cold butter until crumbly.
  8. Sprinkle the streusel mixture generously over your batter in the loaf pan.
  9. Bake for about 50-60 minutes. To check if it's done, insert a wooden skewer into the center; it should come out clean.
  10. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack.
