  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 2 cups vegan marshmallows crème
  • 2 cups semi-sweet chocolate chips (for topping)
  • 2 tablespoons coconut oil or butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually mix into wet ingredients until combined.
  5. Fold in chocolate chips gently.
  6. Press dough evenly into the baking dish and bake for 20-25 minutes until golden brown. Cool completely.
  7. Spread vegan marshmallows crème over the cooled cookie base.
  8. Melt semi-sweet chocolate chips with coconut oil in the microwave until smooth. Pour over marshmallow layer.
  9. Allow to set at room temperature or refrigerate slightly before cutting into squares.
