  • 2 cups + 1 tablespoon all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast, crumbled
  • 3 large eggs, beaten
  • 2/3 cup unsalted butter, softened
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 1/4 cup sugar (for custard)
  • 3 tablespoons cornstarch
  • Mini chocolate chips

Instructions

  1. Prepare the brioche dough by mixing flour, sugar, salt, and yeast in a stand mixer. Add beaten eggs and knead until smooth. Gradually add softened butter while kneading until sticky.
  2. Let the dough rise in a warm place covered for about 2 hours or until doubled in size.
  3. For the custard, heat milk with butter and vanilla pod. Whisk together egg yolks, sugar, cornstarch, add hot milk gradually to avoid curdling; cook until thickened.
  4. Roll out the dough into a rectangle, spread cooled custard over half, sprinkle chocolate chips, fold over and cut into rectangles.
  5. Let the shaped brioches rise again for about 2 hours on parchment-lined sheets.
  6. Brush with beaten egg mixture and bake at 350°F (180°C) for 10-12 minutes until golden brown.
  7. Prepare sugar syrup by boiling water and sugar; brush over warm brioches after baking.
