  • 2 large boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 4 oz cream cheese, softened
  • 1 cup shredded Parmesan cheese
  • 4 cloves garlic, minced
  • 8 oz uncooked pasta (elbow macaroni or shells)
  • Fresh parsley or basil for garnish
  • Optional: shredded mozzarella cheese

Instructions

  1. Place chicken breasts at the bottom of a crockpot.
  2. Sprinkle minced garlic, Italian seasoning, salt, and pepper over the chicken.
  3. Pour chicken broth over everything until covered.
  4. Cover and cook on low for 4–5 hours.
  5. Shred the cooked chicken and return it to the broth.
  6. Stir in softened cream cheese and Parmesan until melted into a creamy sauce.
  7. Add uncooked pasta and stir well; cover and cook on high for an additional 30–45 minutes until pasta is al dente.
  8. If using mozzarella cheese, sprinkle it on top before serving and let it melt.
  9. Garnish with parsley or basil as desired.
