  • 1 ¾ cups heavy cream
  • 1 cup mascarpone cheese
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups brewed espresso (cooled)
  • 3 tbsp almond extract (non-alcoholic)
  • 1 package ladyfinger cookies (about 7 oz)
  • 1 ½ cups cherry preserves
  • Fresh cherries for garnish
  • Unsweetened cocoa powder for dusting

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Fold in mascarpone cheese, powdered sugar, and vanilla until smooth.
  2. Mix cooled espresso with almond extract in a shallow bowl.
  3. Quickly dip each ladyfinger into the espresso mixture and layer them at the bottom of a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Top with half of the cherry preserves and fresh cherry halves.
  6. Repeat layers with remaining ingredients.
  7. Cover and refrigerate for at least six hours or overnight.
  8. Dust with cocoa powder before serving and garnish with fresh cherries.
