  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub and dry the russet potatoes, pierce them with a fork, rub with olive oil, and season with salt and pepper.
  3. Bake the potatoes on a baking sheet for about 45 minutes until tender.
  4. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  5. Stir in taco seasoning with water as directed on the packet; simmer for 5 minutes.
  6. Once potatoes are done baking, cut a slit on top and gently squeeze them open.
  7. Fill each potato with seasoned beef and top generously with cheddar cheese.
  8. Return to the oven for an additional 5 minutes until cheese melts.
  9. Top with sour cream, green onions, diced tomatoes, black olives, and cilantro.
