  3. Pour the wet mixture into the dry ingredients and gently fold until just combined; some lumps are okay.
  4. Allow the batter to rest for 10-15 minutes.
  5. Heat vegetable oil in a deep pot to about 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil and fry for about 2-3 minutes on each side until golden brown.
  7. Remove with a slotted spoon and drain on paper towels.
  8. Dust with powdered sugar while warm and serve immediately.
