  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 5 tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 1/2 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until fluffy.
  3. Add eggs and vanilla; mix until combined.
  4. In another bowl, whisk dry ingredients—cake flour, cornstarch, baking soda, baking powder, and salt.
  5. Gradually add dry mixture to wet ingredients; mix until just combined.
  6. Chill dough for an hour in the fridge.
  7. For filling, combine softened butter, brown sugar, cinnamon, and cake flour until smooth.
  8. Scoop chilled dough; create a well for filling in half the dough piece.
  9. Seal with another half of dough; pinch edges tightly.
  10. Place on prepared baking sheets and bake for 11-13 minutes until set but slightly soft in the middle.
  11. Cool slightly before icing with a mixture of powdered sugar, cinnamon, melted butter, and milk.
