  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon filets (about pounds)
  • 2 medium peaches (pitted, thinly sliced)
  • 2 teaspoons Dijon coarse ground mustard
  • 2 teaspoons garlic (minced)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, black pepper, and red pepper flakes.
  2. Marinate the salmon filets in half of the marinade for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Heat oil in an oven-safe skillet over medium-high heat. Sear the marinated salmon skin-side up for 2-3 minutes.
  5. Flip the salmon and add peach slices to the skillet.
  6. Pour in the reserved marinade and transfer to the oven.
  7. Bake for 12-15 minutes until salmon reaches an internal temperature of 145°F (63°C).
  8. Serve immediately, garnished with fresh parsley.
