  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 cup BBQ sauce (non-alcoholic)
  • 1 cup shredded cheddar cheese
  • 4 sub rolls
  • 8 slices crispy turkey bacon

Instructions

  1. Preheat the oven to 375°F (190°C) for toasting the sub rolls.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, smoked paprika, salt, and pepper until just mixed.
  3. Form the mixture into meatballs about 1.5 inches in diameter (aim for around 16-20).
  4. Heat olive oil in a skillet over medium heat and brown the meatballs on all sides for about 5–7 minutes.
  5. Add BBQ sauce to the skillet and let meatballs simmer gently for about 10 minutes.
  6. While simmering, slice sub rolls lengthwise and toast them in the oven until golden brown (about 5 minutes).
  7. Assemble the subs by placing meatballs inside toasted rolls, topping with more sauce, cheddar cheese, and turkey bacon.
  8. Return assembled subs to the oven for an additional 2–3 minutes until cheese is melted.
  9. Serve immediately and enjoy!
