Ingredients

Scale
  • 4 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 packet (7g) instant yeast
  • ½ teaspoon salt
  • ½ cup whole milk, warmed
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 2 cups whole milk for filling
  • ½ cup granulated sugar for filling
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 teaspoons vanilla extract
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large mixing bowl, combine flour, sugar, yeast, and salt. Add warmed milk, eggs, melted butter, and optional lemon zest; mix until a soft dough forms.
  2. Knead the dough for about 5 minutes until smooth. Cover and let it rise in a warm area until doubled in size (about 1 hour).
  3. Prepare the pastry cream by heating milk with sugar in a saucepan. Whisk egg yolks with cornstarch until smooth; slowly add hot milk mixture while whisking.
  4. Return to low heat until thickened; stir in vanilla extract and butter. Let cool.
  5. Roll out risen dough to half an inch thick and cut into circles. Let rise again until puffy.
  6. Fry in heated vegetable oil until golden brown on both sides (about 2-3 minutes). Drain on paper towels.
  7. Once cooled slightly, fill bomboloni with pastry cream using a piping bag and dust with powdered sugar before serving.
