  • 1 ½ cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • ⅓ cup unsalted butter (melted)
  • 4 packages cream cheese (softened)
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs (room temperature)
  • ½ cup rainbow jimmies (or sprinkles)
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 350°F.
  2. Combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a greased springform pan.
  3. Beat cream cheese and granulated sugar until smooth. Mix in sour cream and vanilla.
  4. Add eggs one at a time, mixing gently after each addition. Fold in jimmies.
  5. Pour filling into crust and bake for about 60 minutes until set but slightly wobbly in the center.
  6. Cool in the oven with the door ajar for an hour; refrigerate at least four hours before serving. Top with whipped cream.
