Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for about 5-7 minutes on each side until golden brown. Set aside.
  2. In a saucepan, bring chicken broth to a boil with a pinch of salt. Add rice, reduce heat to low, cover, and simmer for 15-20 minutes until tender.
  3. In the same skillet used for chicken, melt butter over medium heat. Whisk in flour to create a roux. Gradually add whole milk and broth until smooth and thickened. Stir in garlic powder, thyme, cheddar cheese, and Parmesan cheese.
  4. Return seared chicken to the skillet with the sauce, spooning sauce over each piece. Serve over fluffy rice garnished with fresh parsley.
