  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • Vegetable oil (for frying)

Instructions

  1. In a mixing bowl, combine cream cheese, shredded cheddar cheese, chopped jalapeños, green onion, garlic powder, salt, and pepper. Mix until well blended.
  2. Lay an eggroll wrapper on a flat surface. Spoon 2 tablespoons of the filling onto the wrapper diagonally. Fold up the bottom corner over the filling and then fold in the sides before rolling tightly into a burrito shape. Seal edges with water.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C). Carefully fry the eggrolls seam side down in batches until golden brown and crispy (about 3-4 minutes). Drain on paper towels.
  4. Serve hot with your favorite dipping sauce.
