  • 2 medium apples (Granny Smith or Gala) – peeled and diced into 1/2 pieces
  • 2 Tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter – room temperature
  • 2/3 cup sugar
  • 2 eggs – room temperature
  • 1 ½ teaspoon vanilla extract
  • ½ cup milk
  • 8 oz. brick-style cream cheese – room temperature
  • 1/3 cup granulated sugar
  • 3 Tablespoons all-purpose flour
  • 1 teaspoon vanilla
  • 1 egg
  • ¾ cup powdered sugar
  • 2 Tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and grease a 9 x 5-inch loaf pan with baking spray.
  2. In a bowl, mix together topping ingredients: flour, oats, light brown sugar, cinnamon, nutmeg, and melted butter until crumbly.
  3. In another bowl, toss diced apples with granulated sugar and cinnamon.
  4. For the batter, whisk together flour, baking powder, and salt in one bowl. In another bowl, beat butter and sugar until fluffy; add eggs and vanilla extract. Combine dry ingredients with milk until just mixed.
  5. Create the cream cheese filling by beating cream cheese with sugar until smooth; add flour, vanilla extract, and an egg.
  6. Pour half the batter into the prepared pan; layer half of the apple mixture followed by half of the cream cheese filling. Repeat layers and finish with crumbly topping.
  7. Bake for about 50 minutes or until golden brown; check doneness with a toothpick.
