  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Prepare a baking dish by buttering or spraying with oil and lining it with parchment.
  2. In a sauté pan, boil the apple cider until reduced by half (about 5 minutes). Add diced butter and whisk until melted.
  3. In a bowl, mix eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt.
  4. Slowly whisk in reduced cider mixture.
  5. Gently fold in flour until just combined.
  6. Pour batter into prepared dish and bake for 22 to 25 minutes until golden.
  7. Let cool briefly; top with melted butter and cinnamon-sugar mixture.
