  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream (or Greek yogurt)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F and grease a 9-inch square baking dish.
  2. In a large sauté pan, boil fresh apple cider until reduced by half (about 5 minutes). Whisk in the cold butter until smooth.
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Gradually mix in the boiled cider mixture until well combined.
  5. Gently fold in the flour until just incorporated.
  6. Pour the batter into the prepared dish and bake for 22-25 minutes or until golden brown.
  7. Let cool slightly before topping with melted butter and a cinnamon-sugar mixture.
